TOMATO, ONION, CUCUMBER SALAD

WITH CRUMBLED GARGONZOLA


2         tomatoes (cubed)

1         cucumber (peeled, seeded and cubed)

1         red or yellow onion (chopped)

           crumbled gorgonzola (amount per personal preference)

1/4 C  black pepper vinaigrette (see below)


· Combine all into mixing bowl

· Toss, add crumbled gorgonzola on top and serve.



Black Pepper Vinaigrette

1 C        red wine vinegar

3/4 C     sugar

1 tsp      salt

1 tsp      freshly grounded or cracked pepper

1/2 tsp   chopped garlic

1 C        corn oil


· Add all ingredients into mixing bowl except corn oil and mix

· Slowly whisk mixture, adding oil until emulsified
