SUMMER TOMATO AND WATERMELON SALAD


This is an unusually good combination.  Make this when local tomatoes and watermelon are abundant!


Yield:  2 Generous Salads

Preparation Time:  20 minutes


1 cup seedless watermelon, cubed

1 cup mixed cubed tomatoes or halved sun-gold cherry tomatoes

1 cup arugula leaves, tough stems removed

Basil

Cilantro

Mint

1 teaspoon honey

1 tablespoon olive oil

1 teaspoon sherry vinegar

Dash chili paste, tabasco, or chile powder

Salt & pepper to taste


In a small mixing bowl, mix honey, olive oil, vinegar & chili paste.  In a large mixing bowl, combine

watermelon, tomato, arugula & herbs to your liking.  Season with salt & pepper.  Gently toss with

prepared dressing.  Adjust seasoning and serve.
