Egg Harbor Café’s at Home Pumpkin Pancakes

Approximately 3 ½ Cups of your favorite pancake batter prepared

½ Cup 100% Pumpkin Puree

1 ½ Tablespoons of Sugar

1/8 Teaspoon of Pumpkin Pie Spice

4-6 Halved Pecans per Pancake

Cinnamon Sugar, Butter, and Whipped Cream for Garnish

Mix Prepared Pancake Batter with Pumpkin Puree, Sugar, and Pumpkin Pie Spice.

Spray a heavy griddle with nonstick spray and heat over medium heat.

Spoon about 4 Tablespoons of batter onto the griddle to form each pancake. Cook for about 1 minute and add the pecan halves, continue to cook for 2 minutes more or until bubbles appear, turn pancakes over and cook for 2-3 minutes longer. Transfer pancakes to plates and sprinkle with cinnamon sugar, top with softened butter, and whip cream.
