Libertyville Farmers Market Recipe Demonstration

Serves 4

1 Bottle Pigtale Twist Ridiculously Garlic Blue Dressing, brought to room temperature for 1-2 hours

1 Pound Barilla Fettuccini

8-10 Large, Fresh Basil Leaves, rolled and chiffonad

1-Pint Ripe, Cherry or Grape Tomatoes cut into halves

Boil the pasta and drain very well per the instructions on the box. Toss pasta in a large, shallow bowl with

entire contents of Ridiculously Garlic Blue Dressing. Lie/stack basil leaves one on top of the other, then roll them tightly on the long edge, like a cigar. Using a sharp knife slice the rolled basil into 1/8 to 1/16th of an

inch. Fluff the basil to separate. Toss tomatoes and basil into the fettuccini and serve.

This salad is terrifically adaptable with spicy, sautéed shrimp, meat pulled from a rotisserie chicken, mini-meatballs, leftover holiday ham or turkey, even slices of flank steak. Make it your own!

This simple recipe is wonderful with a big, fresh salad and a warm loaf of garlic bread!
